Meat Loaf

INGREDIENTS

Meat Loaf

• 1 lb ground beef

• 1/2 lb ground pork

• 1/2 cup breadcrumbs

• 1/2 cup milk

• 1 small onion, finely chopped

• 1 small bell pepper, finely chopped

• 2 cloves garlic, minced

• 1 large egg

• 2 tbsp cannabis-infused olive oil

• 1 tbsp Worcestershire sauce

• 1 tsp salt

• 1/2 tsp black pepper

• 1/2 tsp dried thyme

• 1/2 tsp dried oregano

Glaze

• 1/4 cup ketchup

• 2 tbsp brown sugar

• 1 tbsp Dijon mustard

INSTRUCTIONS

  1. Set your oven to 375°F (190°C).

  2. In a small bowl, combine 1/2 cup of breadcrumbs with 1/2 cup of milk. Let it sit for a few minutes to absorb.

  3. In a large mixing bowl, combine the ground beef, ground pork, soaked breadcrumbs, chopped onion, chopped bell pepper, minced garlic, egg, cannabis-infused olive oil, Worcestershire sauce, salt, black pepper, thyme, and oregano. Use your hands to gently mix everything together until just combined. Be careful not to overmix, as this can make the meatloaf dense.

  4. Transfer the meat mixture to a loaf pan and shape it into a loaf. Press it down lightly to ensure it's even.

  5. In a small bowl, mix together the ketchup, brown sugar, and Dijon mustard. Spread the glaze evenly over the top of the meatloaf.

  6. Place the meatloaf in the preheated oven and bake for 45-60 minutes, or until the internal temperature reaches 160°F (71°C).

  7. Once done, let the meatloaf rest for 10 minutes before slicing. This helps to keep it moist and allows the flavours to meld.

  8. Slice the meatloaf and serve it with your favourite sides.
