Lemon Loaf

INGREDIENTS

• 1/2 cup cannabutter, softened

• 1 cup granulated sugar

• 2 large eggs

• 1/2 cup milk

• 1/4 cup fresh lemon juice

• 1 tbsp lemon zest

• 1 1/2 cups all-purpose flour

• 1 tsp baking powder

• 1/2 tsp salt

• (Optional) powdered sugar for dusting

INSTRUCTIONS

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.

  2. In a mixing bowl, cream together the cannabutter and granulated sugar until light and fluffy. Beat in the eggs one at a time, mixing well after each addition and Stir in the milk, lemon juice, and lemon zest until everything is well combined.

  3. In a separate bowl, whisk together the flour, baking powder, and salt.

  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.

  5. Pour the batter into the prepared loaf pan and smooth the top before baking in the preheated oven for 45-55 minutes, or until a toothpick inserted into the center comes out clean.

  6. Allow the lemon loaf to cool in the pan for about 10 minutes before removing from the pan and transferring to a wire rack to cool completely. Once cooled, dust with powdered sugar if desired.

  7. Slice the lemon loaf and serve it as a delightful treat.
