Shrimp Scampi

This recipe combines the richness of butter, the freshness of lemon, and the delightful flavors of garlic and shrimp to create a dish that's perfect for a special occasion or whenever you're craving a taste of restaurant-quality cuisine at home.

INGREDIENTS

  • 1 lb large shrimp, peeled and deveined, tails on

  • 8 oz linguine or spaghetti

  • (up to) 4 tbsp of cannabutter

  • 2 tbsp olive oil

  • 4 cloves garlic, minced

  • 1/4 tsp red pepper flakes (adjust to taste)

  • 1/4 cup dry white wine

  • 1 lemon

  • Salt and freshly ground black pepper, to taste

  • 1/4 cup fresh parsley, chopped

  • Grated Parmesan cheese, for serving

INSTRUCTIONS

  1. Dry the shrimp and season with a pinch of salt and black pepper. Set aside.

  2. In a large pot of boiling salted water, cook the linguine or spaghetti according to the package instructions until al dente. Reserve about 1/2 cup of pasta water, then drain the pasta. Set aside

  3. In a large skillet, heat 2 tbsp of olive oil over medium-high heat. Add the shrimp in a single layer and cook for about 2 minutes per side, until they turn pink and opaque. Do not overcook. Remove the shrimp from the skillet and set them aside.

  4. In the same skillet, reduce the heat to medium. Add the cannabutter and let it melt. Add the minced garlic and red pepper flakes, and sauté for about 1 minute until the garlic becomes fragrant. Be careful not to let it brown.

  5. Pour in the white wine and bring to a gentle simmer. Allow the wine to cook for about 2 minutes, letting it reduce slightly.

  6. Stir in the lemon juice and lemon zest, and let the flavors meld for another minute

  7. Add the cooked pasta to the skillet, tossing to coat the pasta in the sauce. If the sauce is too thick, you can add a splash of the reserved pasta water to achieve your desired consistency.

  8. Add the cooked shrimp back into the skillet, tossing everything together to heat the shrimp through. Taste and adjust the seasoning with salt and black pepper as needed.

  9. Sprinkle the chopped parsley over the pasta and shrimp.

  10. Divide the shrimp scampi pasta among serving plates. Optionally, top with a generous sprinkle of grated Parmesan cheese.
