Shepherd's Pie

INGREDIENTS

Meat Filling:

  • 1 lb ground lamb or beef

  • 1 onion, finely chopped

  • 2 carrots, peeled and diced

  • 1 cup frozen peas

  • 2 cloves garlic, minced

  • 2 tbsp tomato paste

  • 1 cup beef or vegetable broth

  • 1 tsp Worcestershire sauce

  • 1 tsp dried thyme

  • Salt and black pepper, to taste

Mashed Potato Topping:

  • 4 large russet potatoes, peeled and cubed

  • 1/2 cup cannabutter

  • 1/4 cup milk or heavy cream

  • Salt and black pepper, to taste

INSTRUCTIONS

  1. In a large skillet, heat a drizzle of oil over medium heat. Add the chopped onion and diced carrot and sauté for about 5 minutes until they begin to soften.

  2. Add the ground lamb or beef and cook until browned. Break up the meat with a spoon as it cooks.

  3. Stir in the minced garlic and tomato paste. Cook for an additional 2 minutes.

  4. Pour in the beef or vegetable broth and Worcestershire sauce. Add dried thyme, salt, and black pepper then bring the mixture to a simmer and cook for about 10-15 minutes until the liquid has reduced and the flavors have melded.

  5. Stir in the frozen peas and cook for another 2-3 minutes. Remove from heat and set aside.

  6. In another large pot of salted water, place the peeled and cubed potatoes and bring to a boil and cook until the potatoes are fork-tender, about 15-20 minutes. Afterwards, drain the cooked potatoes and return them to the pot.

  7. Add the cannabutter butter and milk or heavy cream to the potatoes. Use a potato masher or a hand mixer to mash the potatoes until smooth and creamy. Season with salt and black pepper to taste.

  8. Preheat your oven to 375°F (190°C). Pour the prepared filling into a baking dish and spread it evenly. Add creamy mashed potatoes over the filling, starting from the edges and working your way towards the center. Use a fork to create decorative peaks on the surface.

  9. Place the baking dish in the preheated oven and bake for about 20-25 minutes or until the mashed potato topping is golden brown and the filling is bubbling.

  10. Remove from the oven and let the Shepherd's Pie cool for a few minutes before serving.
