Chicken Penne Alla Vodka

Indulge in the rich and creamy flavors of our Penne Alla Vodka with Chicken, a delectable pasta dish featuring tender chicken in a luxurious vodka-infused tomato sauce.

INGREDIENTS

• 8 oz (about 2 cups) penne pasta

• 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

• 2 tbsp cannabis-infused olive oil

• 1 small onion, finely chopped

• 3 cloves garlic, minced

• 1 can (28 oz) crushed tomatoes

• 1/2 cup vodka

• 1 cup heavy cream

• 1/2 cup grated Parmesan cheese

• 1/4 cup fresh basil leaves, chopped

• Salt and pepper to taste

• Red pepper flakes (optional, for a little heat)

INSTRUCTIONS

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with oil.

  2. In a large mixing bowl, combine the ground beef, breadcrumbs, grated Parmesan cheese, milk, egg, minced garlic, chopped parsley, dried oregano, salt, and pepper. Mix the ingredients together until well combined, but avoid overmixing to keep the meatballs tender.

  3. Using your hands, shape the meat mixture into golf ball-sized meatballs and place them on the prepared baking sheet, evenly spaced apart.

  4. Place the baking sheet in the preheated oven and bake the meatballs for 20-25 minutes, or until they are cooked through and browned on the outside.

  5. While the meatballs are baking, prepare the sauce. In a saucepan, combine the cannabuter, crushed tomatoes, minced garlic, dried basil, dried oregano, salt, and pepper. Simmer the sauce over low heat for 10-15 minutes, stirring occasionally, to allow the flavors to meld together.

  6. Once the meatballs are done baking, transfer them to the saucepan with the prepared sauce, gently tossing until they are evenly coated.

  7. Garnish with grated Parmesan cheese and fresh basil leaves for an extra burst of flavor before serving. Eat over cooked spaghetti or with bread on the side for a full meal.

TIPS

• For added heat, sprinkle in some red pepper flakes while sautéing the garlic and onions.

• Serve with a side of garlic bread or a fresh green salad to complete the meal.
