Veggie Fried Rice

Veggie Fried Rice, packed with fresh veggies, aromatic spices, and perfectly stir-fried rice for a flavorful and nutritious dish!

INGREDIENTS

• 2 cups of cooked jasmine rice (day-old rice works best)

• 2 tbsp vegetable oil

• 2 cloves garlic, minced

• 1 small onion, finely chopped

• 1 carrot, diced

• 1 red bell pepper, diced

• 1 cup frozen peas

• 2 large eggs, beaten

• 2 tbsp soy sauce

• 2 tbsp cannabutter

• Salt and pepper to taste

• Chopped green onions for garnish (optional)

INSTRUCTIONS

  1. Cook the rice according to the package instructions. For best results, use day-old rice as it's less sticky.

  2. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and finely chopped onion to the hot oil. Sauté for about 1-2 minutes until fragrant and the onions turn translucent.

  3. Stir in the diced carrot, red bell pepper, and frozen peas. Cook for about 3-4 minutes until the vegetables start to soften.

  4. Push the veggies to one side of the skillet and pour the beaten eggs into the other side. Quickly scramble the eggs until they are cooked through.

  5. Add the cooked rice to the skillet, breaking up any clumps. Stir-fry everything together for a few minutes, allowing the rice to get hot and absorb the flavors.

  6. Drizzle soy sauce and add cannabutter over the fried rice and stir well to evenly distribute the flavors. Taste the fried rice and adjust the seasoning with salt, pepper, or more soy sauce if needed.

  7. Serve your homemade veggie fried rice hot and savor the wonderful blend of flavors

TIPS

• For extra protein, add scrambled eggs, tofu, or any other meat alternative

• Add a splash of sesame oil at the end of cooking for an extra layer of nutty flavor
