Pumpkins Spice Muffins

INGREDIENTS

  • 1/2 cup cannabutter, melted

  • 2 cups all-purpose flour

  • 1 cup granulated sugar

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1 tsp ground cinnamon

  • 1/2 tsp ground nutmeg

  • 1/4 tsp ground cloves

  • 1/4 tsp ground ginger

  • 1 cup canned pumpkin puree

  • 1/2 cup vegetable oil

  • 2 large eggs

  • 1 tsp vanilla extract

INSTRUCTIONS

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.

  2. In a large mixing bowl, whisk together the melted cannabutter, all-purpose flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.

  3. In another bowl, combine the pumpkin puree, vegetable oil, eggs, and vanilla extract. Mix until well combined.

  4. Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined. Avoid overmixing to keep the muffins tender.

  5. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

  6. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.

  7. Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

  8. Remove muffins from tin and store or serve and enjoy responsibly.
