Bean Loaded Sweet Potato

INGREDIENTS

• 4 medium-sized sweet potatoes

• 2 tbsp cannabutter

• 2 cloves garlic, minced

• 1 tsp fresh rosemary, finely chopped

• 1/2 tspfresh thyme leaves

• Salt and pepper to taste

• 1 cup canned black beans, drained and rinsed

• 1 cup corn kernels (fresh, frozen, or canned)

• 2 green onions, thinly sliced

• 1/2 cup white onions, finely chopped

• 1/2 cup shredded cheddar cheese (optional)

• Sour cream for garnish

• Fresh cilantro leaves for garnish (optional)

INSTRUCTIONS

  1. Preheat the oven to 400°F (200°C). Wash and scrub the sweet potatoes, before patting dry with a paper towel. Using a fork, pierce each sweet potato several times to allow steam to escape while baking.

  2. Place the sweet potatoes directly on the oven rack or on a baking sheet. Bake for 45-60 minutes, or until the sweet potatoes can be easily pierced with a fork. Time may vary depending on the size of your sweet potatoes.

  3. In a skillet, heat a bit of oil over medium heat. Add the chopped white onions and sauté until they become translucent before adding the corn kernels and black beans. Cook for 5-7 minutes, or until the corn is tender and the mixture is heated through. Season with salt and pepper to taste.

  4. When the sweet potatoes are done baking, remove them from the oven and allow to cool before slicing each sweet potato in half lengthwise. Use a spoon to gently scoop out a well in the centre of each sweet potato, leaving about 1/4 inch of flesh attached to the skin.

  5. Drizzle a generous amount of the cannabutter onto each sweet potato and fill with the corn and black bean mixture, along with the scooped sweet potato flesh. Top with shredded cheddar cheese then bake for an additional 5 minutes, or until the cheese is melted.

  6. Remove the loaded sweet potatoes from the oven. Garnish each sweet potato with sliced green onions, a dollop of sour cream, and fresh cilantro leaves (if desired) before serving.
