Simple Chicken Marinade

INGREDIENTS

  • 1/2 cup lemon juice

  • 2 cloves of garlic, chopped

  • 1 1/2 tsp salt

  • 1 1/2 tsp rosemary

  • 1/2 cup of J & Jay's olive oil

INSTRUCTIONS

Marinade:

  • In a blender bowl, mix together J & Jay's olive oil, lemon juice, salt, garlic, and rosemary. Mix until smooth.

  • If placing the thicken into a freezer bag, pour the marinade over the chicken and evenly coat. If using a bowl, place chicken in a bowl and evenly pour t he marinade over.

  • Seal the freezer bag or cover the bowl. Refrigerate and marinate the chicken for at least 30 minutes up and up to 24 hours, as desired.

Cooking Methods:

Grilling

  • Preheat grill to medium high heat and lightly oil the grates. Remove the chicken from the marinade, letting the excess drip off. Grill chicken for 5 to 6 minutes on each side or until cooked through. Chicken needs to reach an internal temperature of 165°F. Baste the chicken occasionally with the reserved marinade. Remove chicken from the grill and cover with foil. Let chicken rest for at least 5 minutes before serving.

Baking

  • Preheat the oven to 400°F. Place marinated chicken on a shallow baking sheet or baking pan and cook for 18 to 22 minutes or until chicken reaches an internal temperature of 165°F. Let chicken rest for at least 5 minutes before serving. Baste as often as you can for best flavor.

Stovetop

  • Preheat a skillet over medium high and coat with grease. Cook chicken for 8 to 10 minutes on each side or until chicken reaches an internal temperature of 165°F. Let chicken rest for at least 5 minutes before serving.

TIPS

  • Add more J & Jay's olive oil or substitute regular olive oil based on desired dosage.

  • This can be used for any cut of chicken as deisred. Cooking time will vary depending on cut. Be sure to cook until the chicken reaches an internal temperature of 165°F.

  • If cooking on stovetop, use stovetop grill pan to get those appetizing grill marks.

  • Marinade can be pre-made and stored in the fridge or freezer before using.
