Garlic Butter Shrimp

INGREDIENTS

  • 1 1/2 tbsp of olive oil

  • 1 lb shrimp, deshelled

  • 1/2 tsp salt

  • 2 tbsp garlic

  • 1/4 tsp red pepper flakes

  • 3 tbsp of J & Jay's Cannabutter

  • 3 tbsp lemon juice

  • 1 cup fresh parsley

  • 1 tbsp caper brine

INSTRUCTIONS

  1. Heat olive oil in a heavy skillet over high heat until it just begins to smoke. Place shrimp in an even layer on the bottom of the pan and cook for 1 minute without stirring.

  2. Season shrimp with salt as desired and cook for about 1 minute while stirring until shrimp begin to turn pink.

  3. Stir in garlic and red pepper flakes as desired, cooking for 1 minute. Stir in lemon juice, caper brine, 1 1/2 tbsp of J & Jay's Cannabutter, and half the parsley.

  4. Cook until butter has melted then turn heat to low and stir in 1 1/2 tbsp cold butter. Cook and stir for about 1-2 minutes until all butter has melted to form a thick sauce and shrimp are pink and opaque,

  5. Remove shrimp and transfer to a bowl. Continue to cook butter sauce for about 2 minutes. Season with salt to taste.

  6. Garnish with more parsley and serve shrimp topped with the pan sauce.

TIPS

  • Add more cannabutter or substitute regular butter based on desired dosage

  • Serve as an addition to pasta, broccoli, rice, bread, asparagus, your favourite side, or eat as is

  • Add tablespoons of water to the pan sauce to thin if too thick.
